Celery Salad with a Thai Twist

I did not like celery until a few years ago. Now, I sometimes crave it. Celery is loaded with vitamins, minerals, antioxidants and fiber. Celery is also rich in a phytochemical known as phthalides. This compound is thought to relax artery wall tissues to promote healthy blood flow. This increased blood flow may lead to lower blood pressure. Here’s a quick and crisp celery salad for summer.

Ingredients

  • 4 celery stalks (preferably organic), chopped
  • 1/2 cup loosely packed cilantro leaves
  • 1/2-1 jalapeño, diced (depending on heat of your jalapeño)
  • 1 green onion, sliced
  • 1/3 cup carrots, shredded
  • Zest of one small organic lime
  • 1 Tbsp lime juice
  • 1 tsp fish sauce (can sub rice wine vinegar or 1/2 tsp soy sauce)
  • 1 tsp honey or maple syrup
  • 1/2 avocado diced (optional)
  • 2 Tbsp peanuts or cashews
  • Salt and pepper to taste
Serves 2-3

Prep veggies and toss ingredients together.

I serve this with tempeh, sautéed tofu, grilled chicken or pork and brown rice. Also good leftover on a wrap with tempeh, chicken or pork or over a green salad.
