Baked Berry Cobbler

About this Recipe

This recipe makes a great dessert, afternoon snack, or breakfast when draped over 2% Greek yogurt or hot oatmeal with a sprinkle of cinnamon. My kids will accept this as dessert with a little homemade granola sprinkled on top. Double the recipe for breakfast leftovers. You could sweeten it with a little stevia if you’d like, but I like it with just the natural sweetness of the berries.

Ingredients

  • 1 1/2 cups berries (your choice of organic blueberries, blackberries, raspberries, strawberries):
  • 1 organic apple, finely chopped 
  • 2 Tbsp pumpkin seeds, chopped walnuts, and/or chopped almonds

 

1. In ramekin or Pyrex, top berries with nuts
2. Bake at 350 for ~25-28 minutes. Cool 5 mins. Adjust bake time for more servings.
*you can also sub additional berries in place of the apple
 
Berries are one of the healthiest foods you can eat. They are high in fiber, antioxidants, and vitamins such as vitamin C. The array of antioxidants in berries has been shown to reduce oxidative stress, protect DNA from oxidative damage, and reduce markers of chronic inflammation. Berries contain the antioxidant ellagic acid, which may help decrease wrinkling and other signs of skin aging related to sun exposure. Overall, the antioxidants and nutrients in berries can help protect against heart disease, diabetes, and cancer.
