End-Of-Summer Salad
About this Recipe
Packed with antioxidants from dark greens and colorful veggies, this salad is a healthy and refreshing addition to your weeknight dinner, backyard BBQ, or family picnic.
Ingredients
- 4 servings (1 plastic tub) your choice spinach and arugula and/or mixed greens
- 1 cucumber, peeled and sliced thin
- 2 large carrots, shredded into ribbons and loosely chopped
- 2 green onions, sliced
- 1/2 cup Sweety drops (pickled red pepper or chopped red peppers)
- 1 avocado, cubed
- 1/4 cup feta cheese (can add or sub sunflower seeds)
- 1 Tbsp chopped basil leaves
Dressing:
- 1/4 cup olive oil
- 1 Tbsp balsamic vinegar
- 2 tsp honey
- 1 tsp Dijon mustard
- 1 small clove garlic, minced (optional)
- Salt and pepper to taste
Serves 4
- Layer salad ingredients into a large bowl. Wisk together dressing ingredients. Toss to combine and enjoy!!
