Zesty Salmon Salad

About this Recipe

I always grill two extra servings of salmon because I think it’s so tasty leftover. You can use leftover grilled, baked, broiled or canned salmon for this recipe.

Plan to include high quality protein at lunch to help curb afternoon snacking and cravings. (Eggs, chicken, fish, beans, nuts, tofu, tempeh etc.)

Ingredients

  • 4oz salmon, flaked
  • 1/2-1 Tablespoon capers (depending on taste and sodium tolerance)
  • Zest of 1/2 organic lemon + ~1 tsp juice
  • 1 green onion, sliced
  • 1/3 avocado, cubed (optional)
  • Arugula and/or mixed greens
  1. Gently stir ingredients together.
  2. Serve on bed of lettuce or arugula, lettuce wraps, whole grain wrap or whole grain crackers.

* I served this on arugula with a light lemon poppy seed dressing (that’s what I had). I will do a lemon vinaigrette next time.
